Details

A combination of cold soak, whole bunches, natural yeasts, foot stomping, post ferment maceration and lees stirring are employed depending upon the fruit and season. Post ferment the batches were pressed, settled and racked to oak for maturation and malolactic fermentation. A combination of new and used seasoned French oak is utilised to embrace, enhance and project the fruit. Following 10 months maturation in oak the components of the wine were racked, blended, filtered and bottled.
